About the Recipe
Carrots are an excellent source of beta carotene which is converted to vitamin A in the body and is important for vision health and
immunity!

Ingredients
6 medium Carrots (scrubbed, sliced, steamed)
4 cup Chicken broth (stock), low sodium
4 whole lime(s) Lime juice (fresh)
1 tbsp minced Ginger root
1 dash Cayenne pepper (optional)
1 tsp Sea Salt
1/2 can (13.5 oz) Coconut milk, sweetened
pepitas for garnish
cilantro for garnish
Preparation
Steam carrots until soft enough to mash.
Puree all ingredients together with a hand blender.
Garnish with pepitas and cilantro
Enjoyed Chilled or Hot.
