Creamy Carrot-Ginger-Lime Soup

About the Recipe

Carrots are an excellent source of beta carotene which is converted to vitamin A in the body and is important for vision health and
immunity!

Ingredients

  • 6 medium Carrots (scrubbed, sliced, steamed)

  • 4 cup Chicken broth (stock), low sodium

  • 4 whole lime(s) Lime juice (fresh)

  • 1 tbsp minced Ginger root

  • 1 dash Cayenne pepper (optional)

  • 1 tsp Sea Salt

  • 1/2 can (13.5 oz) Coconut milk, sweetened

  • pepitas for garnish

  • cilantro for garnish

Preparation

  1. Steam carrots until soft enough to mash.

  2. Puree all ingredients together with a hand blender.

  3. Garnish with pepitas and cilantro



Enjoyed Chilled or Hot.
