Apple Pie Baked Oatmeal

About the Recipe

Fill your home with the sweet scent of fall. This delicious breakfast bake will warm your home and your belly with a classic fall favorite.

Ingredients

  • 2 cup Rolled oats, dry

  • 1 tsp Baking powder

  • 2 tsp Cinnamon

  • 1 tsp Ginger, ground

  • 1/2 tsp Nutmeg, ground

  • 1/4 tsp Salt

  • 1 3/4 cup Almond milk, unsweetened

  • 2 large Egg

  • 1/3 cup Maple syrup, pure

  • 2 tsp Vanilla extract, pure

  • 1/4 cup Cranberries, dried

  • 1/2 cup Nuts, pecans, dry roasted (chopped)

  • 2 medium Apple (thinly sliced)

Preparation

Step 1


Preheat oven to 375F. Oil a 8x8'' casserole dish with butter, oil or parchment paper. Set aside.



Step 2


In a large bowl, stir together the rolled oats, baking powder, cinnamon, nutmeg, salt and ginger.


Step 3


In a separate bowl, add the almond milk, maple syrup, eggs and vanilla. Whisk until well combined. Add the wet mixture to the bowl with dry ingredients and mix well.


Step 4


Add in apples, pecans, and cranberries.


Step 5


Bake uncovered for 40-45 minutes or until lightly golden brown and toothpick inserted into the center of the oatmeal comes out clean.


Let cool for 5 minutes then cut into squares and serve with desired toppings.
